I have one of those clay roasting pots, lucked out and found it at Goodwill for $12, still in the box, never been used. They sell for upwards of $65 at the stores.
I roast a chicken in it, eat what I want the first night, then the second day, I put the all the leftovers including the juices in a big stock pot and simmer it for a few hours.
Then I lift out all the chicken, debone it, toss the chicken back into the pot.
I don't add anything to it because I'm on low carbs, but, you can put cooked rice or noodles in it or thicken it and make chicken and dumplings.
When I roasted it, I put onions, garlic, shrooms, & carrots in the roaster.
If you don't have one of these roasters, you should get one, it's not just for chicken, I've made a small pot roast in it as well as a pork loin roast.
